清新的番茄香氣配上柔滑的Brie芝士,是一道簡單卻令人愉悅的小食。無論作為開胃前菜或下午茶點,都是輕盈又不膩的選擇。

這道料理的迷人之處,在於它的「簡單」——香脆的麵包、成熟番茄的清甜、橄欖油的果香,再配上芝士的濃滑,讓每一口都充滿陽光的味道。
如今,多士的配搭早已不限於番茄,從蘑菇、煙三文魚到果醬芝士,也可變化出不同風格。

Brie 是來自法國的軟芝士,被譽為「芝士之后」。外層覆蓋一層白霉皮,內裡如奶油般細滑,味道溫和帶著淡淡堅果香。
與酸甜的番茄、微辣的芝麻菜(或沙律菜)配搭時,口感層次分明——柔滑與清爽並存。

🥖 什麼是 Bruschetta?

這是一道來自意大利中部的經典開胃菜。
傳統做法是將法包切片烤香,再抹上蒜頭與橄欖油,最後配上新鮮番茄、羅勒及芝士。
它的靈魂在於那片香脆的麵包與新鮮食材的平衡口感——簡單卻極富層次。
如今的變化版本繁多,從番茄芝士到煙三文魚、蘑菇或橄欖醬都可以隨意搭配。

It is a classic Italian antipasto — toasted slices of bread rubbed with garlic and drizzled with olive oil, topped with fresh tomatoes, herbs, or cheese.
Its beauty lies in simplicity: a crisp base, fragrant olive oil, and vibrant toppings that bring out natural flavours.
Over time, Bruschetta has evolved into countless variations, making it one of the most versatile starters in Italian cuisine.


🧀 什麼是 Brie?

Brie 是來自法國的軟芝士,被稱為「芝士之后」。
它外層有一層白色霉皮,內裡柔滑如忌廉,帶著淡淡的奶香與輕微鹹味。
與番茄和沙律菜的清爽口感十分契合,令 Bruschetta 更添豐富層次。

Brie is a soft cheese from France, often called the Queen of Cheeses.
It has a delicate white rind and a creamy, buttery interior with a mild, slightly earthy flavour.
Brie pairs beautifully with tomatoes and greens, adding a touch of richness to this light Italian-style toast.

Ingredients
  

  • ¼ stick 法式長麵包 ¼ French baguette sliced
  • 2 cloves 蒜頭 garlic
  • 1 tablespoon 牛油 Butter
  • 20 g Brie 芝士 
  • 2 nos. 番茄 Tomato (diced)
  • 1 bowl 沙律菜 salad veggie 洗淨、瀝乾水份 washed and drained
  • 2 teaspoon 橄欖油 Olive oil
  • 1 teaspoon 意大利黑醋 balsamic vinegar
  • to taste 鹽及黑胡椒 Salt & Black Pepper

Instructions
 

  • 蒜頭切半,塗刷於麵包片上,再塗上牛油,放入多士爐或焗爐內烘至微脆溫熱。
  • 將橄欖油、意大利黑醋、鹽和胡椒攪勻,拌入沙律菜和番茄。
  • 將拌好的沙律鋪在麵包上,放上 Brie 芝士即可享用。
  • Rub cut garlic over each bread slice, spread with butter, and toast in an oven or toaster until lightly golden.
  • Mix olive oil, balsamic vinegar, salt, and pepper; toss with salad leaves and tomatoes.
  • Spoon the salad mixture over the toasted bread and top with Brie cheese. Serve immediately.

Notes

Yves Tips!
沒有多士爐或焗爐的朋友,可將麵包放於平底鑊上煎至金黃同樣香脆。If you don’t have a toaster or oven, simply pan-toast the bread until golden and crisp.

10+ years ago, I spent some time living in the cou 10+ years ago, I spent some time living in the countryside of Thailand while working on a cookbook. Back then, phones had only just started recording videos, and my Thai cousin helped me capture so many precious moments — though I never really knew how to edit videos at the time 🥲

Some of the footage was later used by TV stations and media, but there are still many rare clips left unseen. So many of the people, places, and traditions in them no longer exist today.

Now, with today’s tools, I can finally revisit and edit these memories myself.
I’ll slowly share them with you, one by one.

One of those simple dishes that instantly feels like home.

Chicken marinated with garlic, coriander roots, white pepper and fish sauce,
then wrapped in fragrant pandan leaves before frying.

As the leaves toast in the heat,
the whole kitchen fills with that unmistakable Thai aroma.

A little taste of home,
made from my kitchen in Scotland. ✨

Served simply with sweet chilli sauce and cucumber.

泰式香葉包雞
不是泰國大菜,卻是很多人由細食到大的味道。💚

蒜頭、芫荽根、白胡椒、魚露,
再用香葉慢慢包起來。

炸的時候,香葉的香氣會慢慢走出來,
每次打開,都有種回到泰國屋企食飯的感覺。

在蘇格蘭的廚房,
用這些熟悉的味道,煮一點家鄉。

配甜辣醬、青瓜,已經好滿足。✨
