Kamut, also known as the “Grain of Pharaoh,” is an ancient wheat originating from Egypt. It has a naturally nutty aroma and contains more protein, minerals, and vitamins than regular wheat — making it a wonderful choice for modern healthy baking.

Kamut 是源自埃及的古老穀物,又被稱為「法老王的穀物」。這種小麥品種擁有天然的堅果香氣,含有比一般麵粉更高的蛋白質、礦物質與維他命,是現代人追求健康飲食的理想選擇。

Kamut Cranberry & Spices Bread



在這款麵包中,我以 Kamut 麵粉為主,配上紅莓與暖心香料,烤出的麵包香氣濃郁、口感柔軟而有嚼勁。若買不到 Kamut 麵粉,也可全用普通高筋麵粉(Bread Flour)代替。

你亦可依個人喜好,將紅莓換成核桃、葵花籽或其他堅果,製作出屬於自己的風味版本。




In this recipe, I use Kamut flour as the base and add cranberries and warm spices to create a fragrant, soft, and slightly chewy bread. If Kamut flour isn’t available, you can replace it entirely with regular bread flour.

Feel free to personalize it by substituting the cranberries with walnuts, sunflower seeds, or any nuts you like — your homemade twist will make it even more special.

這款健康香氣滿滿的麵包以 Kamut 麵粉製作,如買不到可用普通 Bread Flour 代替。紅莓乾與香料的結合讓每一口都充滿溫暖氣息。
A wholesome spiced bread made with ancient Kamut flour — or simply use regular bread flour if you prefer. The mix of cranberries and spices makes every slice warm and comforting.

Ingredients
  

  • 200 g T70 有機麵粉 T70 Organic Flour
  • 50 g 有機Kamut粉 Organic Kamut Flour
  • 14 g 有機幼啡糖 Organic Brown Sugar
  • 1 no. 雞蛋 Eff
  • 3 g 天然海鹽 Sea Salt
  • 3 g 即溶酵⺟ Dried Yeast
  • 180 ml ⽔ Water
  • 25 ml 有機橄欖油 Olive Oil
  • 1 tablespoon 薑粉 Ground Ginger
  • 2 teaspoon ⾁肉桂粉 Ground Cinnamon
  • 40 g 紅莓乾 Dried cranberries

Instructions
 

紅莓⾹香料Kamut 麵包 (製作時間:4⼩時)

  • 將以上材料(酵母及紅莓乾除外),放入麵包容器內。
  • 將即溶酵⺟及紅莓乾置於指定格內。
  • 按⻝譜編號”1”號,選擇"標準"烤⾊,再按"開始"烘烤。
  • 當完成的聲⾳響起,立即取出置放網架上放涼。

Kamut Flour - Cranberry & Spices Bread (Time required : 4 hours)

  • Put all the ingredients (except instant yeast & dried cranberries) into the bread pan.
  • Put the instant yeast into the yeast dispenser & dried cranberries into nut dispenser.
  • Select menu “1” and select “Standard” crust color. Press the “start” button to proceed.
  • Sound will be heard while finished. Take out the bread from pan & cool on the rack.

The first bite was all about the silky egg and delicate aroma of seaweed. Soft, comforting, and beautifully balanced.

Just when I thought the story had ended, the mentaiko quietly made its appearance — bringing a gentle burst of umami and a hint of spice.

It didn’t steal the spotlight from the egg.

Instead, it completed the whole experience.

Simple ingredients often reveal the most skill.

No wonder this tamagoyaki was crowned Scotland’s Street Food Champion 2025 🏆

Even my Japanese friend approved. 😋

Some dishes don’t need to be complicated.

Growing up in Hong Kong, while many children around me were listening to Cantopop, an eight-year-old girl was already humming Careless Whisper. I would spend my pocket money on cassette tapes and read the lyric sheets over and over again, looking up words in the dictionary. My dream was simple: one day, I wanted to meet him.

Decades later, that little girl is now living in the UK. Life has taken me further than I could ever have imagined, yet sadly I never got the chance to meet him.

Perhaps that is George Michael’s greatest legacy for me. His music crossed cultures, languages and generations, and accompanied me through different chapters of my life. On my way home, I spotted Malay Laksa and simply c On my way home, I spotted Malay Laksa and simply couldn’t resist bringing a bowl home 😍

The lovely owners packed everything separately — broth and toppings apart, while the tofu puffs were left soaking in the soup to absorb all that delicious flavour.

Takeaway dishes can sometimes lose a little magic, but so much thought has gone into the details here that it still scored top marks at home.

Even my notoriously picky husband couldn’t stop praising the pork belly and the rich, comforting broth 😍

And for those who don’t eat meat, there are vegetarian options too 🌱
