士多啤梨奇異果醬 Strawberry Kiwi Jam
:來自一位主持人的果醬靈感

這款果醬,是我第一次上英文電視訪問節目學回來的。

那次節目由來自加拿大的主持人 Rabeea 主持,她私底下跟我分享了這個酸甜清新的配搭:士多啤梨配奇異果。

草莓果膠含量低,一般單獨製成果醬時難以自然凝固,但奇異果卻含有天然豐富的果膠,正好補足,使這款果醬容易成功,也保留了雙重果香與果肉感。

我一直記得她對這個組合的喜愛,私底下還笑說:「這個果醬應該以她的名字命名才對!」雖然我最後沒有真的這樣做,但這份靈感與喜歡,我想記下來,也感謝她當時真誠的分享。

Ingredients
  

材料 Ingredients(約 250ml)

  • 士多啤梨 150克 strawberries
  • 奇異果 100 克 kiwi fruit
  • 碎冰糖 110 克 crushed rock sugar
  • 檸檬汁(半個) Juice from ½ lemon

Instructions
 

做法 Steps

  • 士多啤梨洗淨,去蒂並切粒。
  • 奇異果去皮,切成小粒。
  • 將兩種水果放入小鍋,加入碎冰糖攪拌至略為溶解。
  • 加入檸檬汁。開中小火煮至水果軟化,糖完全溶解。
  • 開大火煮至果醬呈現光澤。趁熱裝入已消毒玻璃瓶。
  • Wash and hull the strawberries, then dice them.
  • Peel the kiwi and chop into small cubes.
  • Combine both fruits in a saucepan. Add crushed rock sugar and stir until partially dissolved.
  • Add lemon juice. Simmer on medium-low heat until fruit softens and sugar fully melts.
  • Turn heat to high and cook until mixture becomes glossy. Pour into sterilized jars while hot.

Notes

Yves Tips
  • 奇異果含豐富果膠,可自然幫助果醬凝固
    Kiwi is rich in natural pectin, helping the jam set without added pectin.
  • 煮前先混合冰糖與水果,有助縮短熬煮時間、保留風味
    Pre-mixing sugar with fruit helps shorten cooking time and preserve nutrients.
  • 可使用「凍碟測試」檢查凝固度
    Use the chilled plate test: drop jam onto a cold plate, wait 20 sec, push with finger—if it wrinkles, it’s ready.
  • 若未成功,可酌量增加檸檬汁再煮 5 分鐘
    If not set, add a bit more lemon juice and cook 5 mins longer.

On my way home, I spotted Malay Laksa and simply c On my way home, I spotted Malay Laksa and simply couldn’t resist bringing a bowl home 😍

The lovely owners packed everything separately — broth and toppings apart, while the tofu puffs were left soaking in the soup to absorb all that delicious flavour.

Takeaway dishes can sometimes lose a little magic, but so much thought has gone into the details here that it still scored top marks at home.

Even my notoriously picky husband couldn’t stop praising the pork belly and the rich, comforting broth 😍

And for those who don’t eat meat, there are vegetarian options too 🌱
