Strawberry Kiwi Jam | 士多啤梨奇異果醬

這個酸甜清新的配搭:士多啤梨配奇異果。草莓果膠含量低,一般單獨製成果醬時難以自然凝固,但奇異果卻含有天然豐富的果膠,正好補足,使這款果醬容易成功,也保留了雙重果香與果肉感。

材料 Ingredients(約 250ml)

  • 士多啤梨 150克 strawberries
  • 奇異果 100 克 kiwi fruit
  • 碎冰糖 110 克 crushed rock sugar
  • 檸檬汁(半個) Juice from ½ lemon

做法 Steps

  • 士多啤梨洗淨,去蒂並切粒。
  • 奇異果去皮,切成小粒。
  • 將兩種水果放入小鍋,加入碎冰糖攪拌至略為溶解。
  • 加入檸檬汁。開中小火煮至水果軟化,糖完全溶解。
  • 開大火煮至果醬呈現光澤。趁熱裝入已消毒玻璃瓶。
  • Wash and hull the strawberries, then dice them.
  • Peel the kiwi and chop into small cubes.
  • Combine both fruits in a saucepan. Add crushed rock sugar and stir until partially dissolved.
  • Add lemon juice. Simmer on medium-low heat until fruit softens and sugar fully melts.
  • Turn heat to high and cook until mixture becomes glossy. Pour into sterilized jars while hot.

    Pre-mixing sugar with fruit helps shorten cooking time and preserve nutrients.
  • 可使用「凍碟測試」檢查凝固度
    Use the chilled plate test: drop jam onto a cold plate, wait 20 sec, push with finger—if it wrinkles, it’s ready.
  • 若未成功,可酌量增加檸檬汁再煮 5 分鐘
    If not set, add a bit more lemon juice and cook 5 mins longer.
