Ever looked at a leftover pack of Yorkshire puddings and thought… what now?
This was exactly me on a slow Sunday morning — standing in the kitchen with just three ingredients: ready-made Yorkshires, a couple of eggs, and a handful of cherry tomatoes. A little smoked salmon was peeking out from the fridge. And that’s when it hit me

“Why not treat Yorkshire pudding like a mini breakfast shell?”

Five minutes later, something magical came out of the oven: golden, puffed-up puddings, warm egg in the middle, melty cheese, juicy tomatoes, and a surprise hint of mint on top. I posted it in a Scottish recipe group — and the response?
"You're a genius."
"This is brilliant."
"Please share the recipe!"

So here it is — my 5 mins meal on the classic Yorkshire, perfect for brunch, lunchboxes, or a quick dinner-for-one.

Ingredients (serves 2)

  • 2 ready-made Yorkshire puddings
  • 2 eggs
  • 3–4 cherry tomatoes, halved
  • 2 tablespoon smoked salmon (or any cooked protein)
  • Optional: cheese, herbs, black pepper
  • Fresh mint to garnish (optional, but pretty!)

Instructions

  1. Place the Yorkshires on the baking tray.
  2. Gently crack an egg into each pudding.
  3. Top with salmon, cherry tomatoes, and cheese if using.
  4. Bake at Air fryer at 180c for 4–5 minutes, or until the egg white is just set.
  5. Garnish with fresh herbs & Dijon mustard. Serve immediately!

What is Yorkshire Pudding?

Despite the name, Yorkshire pudding isn't a dessert. It’s a classic British side dish made from a simple batter of eggs, flour, and milk — similar to pancake batter. When baked in a hot oven with oil or beef drippings, it puffs up into a golden, airy shell with a soft centre.

Traditionally served with roast beef and gravy as part of a Sunday roast, Yorkshire puddings are beloved across the UK for their comforting texture and versatility.

In this recipe, I use a giant Yorkshire pudding as a bake shell, filled with smoked salmon, a baked egg, and creamy ricotta — turning a side dish into a light, flavourful main.

脆邊、流心蛋、酸甜番茄,加上淡淡鹹香,意外地好吃!
這次在蘇格蘭食譜群組一發出去,沒想到被稱讚是天才料理,連我都受寵若驚!

什麼是 Yorkshire Pudding?

別被名字誤導,Yorkshire pudding 其實不是甜品,而是一款英國傳統的鹹點。它的材料非常簡單:蛋、麵粉與牛奶,類似於班戟麵糊。高溫烘焙時加入油或牛肉油脂,會鼓脹起來形成酥脆外層、柔軟內裡的小盅狀點心。

在英國,Yorkshire pudding 通常搭配烤牛肉與肉汁,是經典的星期天家庭烤肉(Sunday Roast)中不可或缺的配角。

這次我用了超大版的 Yorkshire pudding 作為烘焙容器,搭配煙燻三文魚、焗蛋與瑞可塔芝士,讓傳統配菜變成一道清爽又美味的主菜。

Yesterday I had a couple of ready-made Yorkshires sitting in the fridge, and a sudden idea popped into my head…What if I turned them into little savoury breakfast cups?

Ingredients
  

  • 2 ready-made Yorkshire puddings

The first bite was all about the silky egg and delicate aroma of seaweed. Soft, comforting, and beautifully balanced.

Just when I thought the story had ended, the mentaiko quietly made its appearance — bringing a gentle burst of umami and a hint of spice.

It didn’t steal the spotlight from the egg.

Instead, it completed the whole experience.

Simple ingredients often reveal the most skill.

No wonder this tamagoyaki was crowned Scotland’s Street Food Champion 2025 🏆

Even my Japanese friend approved. 😋

Some dishes don’t need to be complicated.

Growing up in Hong Kong, while many children around me were listening to Cantopop, an eight-year-old girl was already humming Careless Whisper. I would spend my pocket money on cassette tapes and read the lyric sheets over and over again, looking up words in the dictionary. My dream was simple: one day, I wanted to meet him.

Decades later, that little girl is now living in the UK. Life has taken me further than I could ever have imagined, yet sadly I never got the chance to meet him.

Perhaps that is George Michael’s greatest legacy for me. His music crossed cultures, languages and generations, and accompanied me through different chapters of my life. On my way home, I spotted Malay Laksa and simply c On my way home, I spotted Malay Laksa and simply couldn’t resist bringing a bowl home 😍

The lovely owners packed everything separately — broth and toppings apart, while the tofu puffs were left soaking in the soup to absorb all that delicious flavour.

Takeaway dishes can sometimes lose a little magic, but so much thought has gone into the details here that it still scored top marks at home.

Even my notoriously picky husband couldn’t stop praising the pork belly and the rich, comforting broth 😍

And for those who don’t eat meat, there are vegetarian options too 🌱
