泰式青木瓜沙律 Tum Thai (ตำไทย)

人在異鄉,用容易取得或在地的食材,做出清爽開胃的泰國家常味

泰式青木瓜沙律

泰式青木瓜沙律(Tum Thai)是我喜歡的泰國家常菜之一。爽脆的木瓜絲及蔬菜絲配上青檸、魚露、椰糖和辣椒,每一口都充滿酸、甜、鹹、辣的平衡,也是炎熱天氣最令人胃口大開的一道菜。

在外地不易買到青木瓜,其實也不用放棄。我喜歡用 Swede(瑞典蕪菁) 配上 White Cabbage(白椰菜),保留青木瓜沙律最重要的爽脆口感,再加入泰式經典調味,依然能做出令人滿足的家常風味。


為了這道美食,我測試了在一般超市買到的蔬菜,最後發現Swede 的質感結實爽脆,切絲後與白椰菜搭配,口感十分接近青木瓜,也容易吸收醬汁。

後來,有機會認識在外地的泰國餐廳朋友,原來她們也是用Swede來取代不易買到的青木瓜。這令我創作這食譜的信心大增了。


傳統製作 Som Tam,會選用未成熟的青木瓜,果肉結實、種子較少,切絲後不容易出水,拌勻後仍能保持爽脆。

除了青檸汁,我家鄉的做法會加入羅望子汁(Tamarind),令酸味更有層次。如果喜歡,我也很建議加入番茄和洋蔥,它們能帶來天然甜味,令整體更加清爽。

至於喜歡泰國東北(Isan)風味的朋友,可以加入少量 Pla Ra(ปลาร้า,發酵魚汁),味道會更加濃郁,也更具地方特色。

青木瓜沙律

泰式青木瓜沙律 Tum Thai (ตำไทย)

如果你身處海外,買不到青木瓜,這是一個簡單又容易成功的做法。這個 Tum Thai 海外版本,以 Swede(瑞典蕪菁) 和 White Cabbage(白椰菜) 代替青木瓜,保留爽脆的口感,再配上青檸、魚露、椰糖和花生,做出酸甜開胃的泰國家常風味。
This overseas version of Tum Thai uses swede and white cabbage in place of green papaya while keeping the fresh, crunchy texture that makes this Thai salad so enjoyable. Dressed with lime, fish sauce, palm sugar and roasted peanuts, it's an easy way to recreate a classic Thai favourite using everyday ingredients.

Ingredients
  

  • ¼ swede 瑞典蕪菁 julienned
  • ¼ white cabbage 白椰菜 finely shredded
  • ½ carrot 甘荀 julienned
  • ¼ celery stalk 西芹 thinly sliced
  • 4 garlic cloves 蒜頭
  • 1-2 chili 辣椒
  • 1 tablespoon long bean 豆角
  • Cherry tomatoes optional
  • 1-2 tablespoon Roasted peanuts 炒花生
  • 2 teaspoon Dried shrimp 櫻花蝦 optional
  • 2 Juice of limes 青檸汁
  • 1 tablespoon Tamarind sauce 羅望子汁 optional
  • 1-2 tablespoon palm sugar
  • 1 teaspoon fish sauce

Instructions
 

  • Julienne the swede, cabbage and carrot into thin strips. 將瑞典蕪菁、白椰菜、甘筍及西芹切幼絲。
  • Pound the garlic, chili & long bean gently in a mortar until fragrant. 將蒜頭、辣椒及豆角放入石盅,輕輕搗碎至釋放香氣。
  • Add coconut sugar, fish sauce and lime juice. Stir until the sugar dissolves. 加入椰糖、魚露及青檸汁拌勻。
  • Add the vegetables and gently pound while tossing to coat evenly. 加入蔬菜,一邊輕輕搗拌,一邊拌勻。
  • Add roasted peanuts and dried shrimp, then toss once more. 加入花生及櫻花蝦,再輕輕拌勻。
  • Serve immediately. 即拌即享用。

Notes

Yves Tips~ 
  • 這個版本是 Tum Thai ,是較清新版本,沒有加發酵魚汁。
  • 我選擇以 Swede 和白椰菜代替青木瓜,不是因為它們味道相同,而是因為它們同樣具有爽脆的口感,也容易吸收醬汁,非常適合製作這道沙律。
  • 如果想增加層次,可以加入番茄和洋蔥;番茄帶來天然甜味,洋蔥則令味道更加清爽。
  • 酸味主要來自青檸汁,如喜歡更圓潤的酸香,可加入少量羅望子汁(Tamarind)。
  • 喜歡吃辣的朋友,可加入新鮮 Bird's Eye Chillies;如果喜歡更傳統的泰國東北風味,則可以另外加入 Pla Ra(發酵魚汁)

The first bite was all about the silky egg and delicate aroma of seaweed. Soft, comforting, and beautifully balanced.

Just when I thought the story had ended, the mentaiko quietly made its appearance — bringing a gentle burst of umami and a hint of spice.

It didn’t steal the spotlight from the egg.

Instead, it completed the whole experience.

Simple ingredients often reveal the most skill.

No wonder this tamagoyaki was crowned Scotland’s Street Food Champion 2025 🏆

Even my Japanese friend approved. 😋

Growing up in Hong Kong, while many children around me were listening to Cantopop, an eight-year-old girl was already humming Careless Whisper. I would spend my pocket money on cassette tapes and read the lyric sheets over and over again, looking up words in the dictionary. My dream was simple: one day, I wanted to meet him.

Decades later, that little girl is now living in the UK. Life has taken me further than I could ever have imagined, yet sadly I never got the chance to meet him.

Perhaps that is George Michael’s greatest legacy for me. His music crossed cultures, languages and generations, and accompanied me through different chapters of my life. The lovely owners packed everything separately — broth and toppings apart, while the tofu puffs were left soaking in the soup to absorb all that delicious flavour.

Takeaway dishes can sometimes lose a little magic, but so much thought has gone into the details here that it still scored top marks at home.

Even my notoriously picky husband couldn’t stop praising the pork belly and the rich, comforting broth 😍

And for those who don’t eat meat, there are vegetarian options too 🌱
