Creamy Cheese Noodles

Inspired by the iconic Hong Kong “Lobster with Cheese E-Fu Noodles,” this easy creamy cheese noodles brings the same comforting flavor using simple ingredients. The imitation crab adds sweetness, the cheese gives it richness, and a sprinkle of chili flakes and spring onions ties everything together perfectly.

這個麵的緣起? Origin of this dish?

這道芝士白汁麵的靈感來自經典港式「East Meets West」料理。最早出現在海鮮酒家,通常以牛油和麵粉炒成白汁麵糊,再加入龍蝦、蝦或帶子,鋪在伊麵上一起焗香。那種奶香混合海鮮味的口感,是許多人對「港式芝士龍蝦伊麵」的共同回憶。

This creamy cheese noodle takes inspiration from the classic Hong Kong “East Meets West” style often found in seafood restaurants. Traditionally, butter and flour are cooked into a white roux, then mixed with lobster or prawns and served over E-fu noodles, creating that iconic buttery, creamy seafood flavor beloved by many.

在外國沒有伊麵,有什麼可代替?E-fu noodle substitutes

在外國較難找到伊麵,可選擇 egg noodles(蛋麵) 或 細幼中式麵條(fine Chinese noodles),甚至用 意粉 spaghetti 也可以。想更貼近港式口感,可將蛋麵煮熟後用少許油撈勻,模仿伊麵的滑彈質感。

Outside Asia, E-fu noodles can be replaced with egg noodles, fine Chinese wheat noodles, or even spaghetti. To mimic the smooth, springy texture of E-fu noodles, toss cooked egg noodles lightly with a bit of oil before mixing with the sauce.

煮白汁時有什麼要注意?Tips for making the white sauce

煮白汁的關鍵是「火候」與「時機」:
-牛油煮熱後要先離火,再加入麵粉拌勻成糊,避免燒焦。
-之後慢慢注入牛奶(分次加),每次都要攪拌至滑順。
-若太稠,可再加少許牛奶調整濃度。
這樣做出來的白汁會幼滑無粉粒,香濃而不膩。

Remove the pan from heat before adding flour to the melted butter to prevent burning.
Pour in milk gradually while stirring constantly until smooth.
Adjust consistency with extra milk if needed.
This method ensures a silky, creamy sauce with no lumps or raw flour taste.

Ingredients
  

  • 160 g 蛋麵 Egg noodle
  • 1 tablespoon 牛油 Butter 
  • 150 ml 牛奶 Milk 
  • 40 g 芝士 Cheese
  • 6 sticks 蟹柳 Surimi (撕開條狀)
  • to taste 鹽、黑椒 Salt & black pepper 
  • a pinch 辣椒碎 Chili flakes 
  • for garnish 蔥花 Chopped spring onion 

Instructions
 

  • 蛋麵接包裝指示煮至略硬(al dente),浸冰水備用。
  • 鑊中加入橄欖油及牛油,煮至牛油溶化。
  • 離火,加入麵粉炒成麵糊。
  • 轉小火加入牛奶拌勻。
  • 慢慢加入芝士拌融,調味加鹽及黑椒。
  • 放入瀝乾水的蛋麵及蟹柳,輕輕翻炒至掛汁。
  • 盛起後灑上辣椒碎與蔥花。
  • Boil noodles until al dente, then soak into cold water and set aside.
  • In a pan, melt butter with oil.
  • Turn off the heat. Add flour and stir until it forms a smooth roux.
  • Lower the heat, add milk gradually.
  • Stir in cheese until melted and creamy. Season with salt and pepper.
  • Add cooked pasta and crab sticks, toss gently to coat.
  • Serve with a sprinkle of chili flakes and chopped spring onion.

  • 想更港式風味,可換用「伊麵」或「烏冬」取代蛋麵。
  • 芝士可混合兩種(Mozzarella + Cheddar),口感更香濃。
  • 想更滑順,可加少許芝士粉或牛奶調稀。
  • 加入蝦仁、帶子或蟹肉,即可升級成豪華版。

The first bite was all about the silky egg and delicate aroma of seaweed. Soft, comforting, and beautifully balanced.

Just when I thought the story had ended, the mentaiko quietly made its appearance — bringing a gentle burst of umami and a hint of spice.

It didn’t steal the spotlight from the egg.

Instead, it completed the whole experience.

Simple ingredients often reveal the most skill.

No wonder this tamagoyaki was crowned Scotland’s Street Food Champion 2025 🏆

Even my Japanese friend approved. 😋

Some dishes don’t need to be complicated.

Growing up in Hong Kong, while many children around me were listening to Cantopop, an eight-year-old girl was already humming Careless Whisper. I would spend my pocket money on cassette tapes and read the lyric sheets over and over again, looking up words in the dictionary. My dream was simple: one day, I wanted to meet him.

Decades later, that little girl is now living in the UK. Life has taken me further than I could ever have imagined, yet sadly I never got the chance to meet him.

Perhaps that is George Michael’s greatest legacy for me. His music crossed cultures, languages and generations, and accompanied me through different chapters of my life. On my way home, I spotted Malay Laksa and simply c On my way home, I spotted Malay Laksa and simply couldn’t resist bringing a bowl home 😍

The lovely owners packed everything separately — broth and toppings apart, while the tofu puffs were left soaking in the soup to absorb all that delicious flavour.

Takeaway dishes can sometimes lose a little magic, but so much thought has gone into the details here that it still scored top marks at home.

Even my notoriously picky husband couldn’t stop praising the pork belly and the rich, comforting broth 😍

And for those who don’t eat meat, there are vegetarian options too 🌱
