Kumquats are known for soothing the throat and reducing phlegm. Paired with the nourishing qualities of rock sugar, this jam also works beautifully as a warm drink when mixed with hot water.
柑橘有去痰潤喉的作用,再加上冰糖的滋潤,這款果醬還可以作沖劑用。

  • 150 g Kumquats 150g(sliced and deseeded|切片去核)
  • 90 g Rock sugar crushed 90g(碎冰糖)
  • 2 tablespoon Lemon juice 2 tbsp(檸檬汁)

Instructions

  • Combine kumquats and crushed rock sugar in a saucepan.
  • Cook over medium-low heat until the fruit softens and the sugar dissolves.
  • Add lemon juice and continue cooking until bubbles form on the surface.
  • Turn to high heat and cook until thickened. Use the wrinkle test on a cold plate to check for set point.

做法

  • 將柑橘與碎冰糖拌勻,放入煲內。
  • 開中慢火煮至水果軟身、冰糖完全溶解。
  • 加入檸檬汁,繼續煮至糖漿冒泡。
  • 轉大火煮至杰身,可用凍碟測試凝固點。
