Instructions
Combine kumquats and crushed rock sugar in a saucepan.
Cook over medium-low heat until the fruit softens and the sugar dissolves.
Add lemon juice and continue cooking until bubbles form on the surface.
Turn to high heat and cook until thickened. Use the wrinkle test on a cold plate to check for set point.

開中慢火煮至水果軟身、冰糖完全溶解。

轉大火煮至杰身,可用凍碟測試凝固點。
