法式薄餅 Crêpe Batter:
- 60 g 普通麵粉 Plain flour
- 35 g 蒿麥粉 buckwheat flour
- 250 ml 牛奶 Milk
- 1 teaspoon 砂糖 Sugar
- ⅛ teaspoon 鹽 Salt
- 2 nos. 雞蛋 Eggs beaten
餡料 Filling:
- 適量 西班牙火腿 Serrano ham
- 適量 芝士碎 Shredded cheese
- 4 nos. 雞蛋 Egg yolks
- 牛油 Butter 少許(煎餅用)
- for garnish 沙律菜或豆苗 Greens
將所有薄餅材料放入攪拌機,以高速打約2分鐘。倒出後放入雪櫃靜置至少2小時。
預熱平底鑊,以少許牛油塗抹,先薄薄煎出第一塊試煎用,棄掉。之後倒入適量麵糊,煎至表面起泡並出現洞孔,翻面再煎約1分鐘。
趁熱鋪上火腿與芝士碎,對摺成方形,中間留空隙放上蛋黃,再加上少許沙律菜裝飾即可。
Combine all crêpe batter ingredients in a blender and mix on high speed for 2 minutes. Chill for at least 2 hours.
Heat a non-stick pan with a little butter. Discard the first test crêpe. Pour a thin layer of batter, cook until bubbles form and holes appear, then flip and cook for 1 more minute.
While warm, add ham and cheese in the center, fold into a square leaving space in the middle for an egg yolk. Top with greens and serve immediately.
