These crispy cheese straws are a crowd favourite — perfect with coffee, soup, or wine.For an extra flaky texture, chill the twisted pastry for 10 minutes before baking.

Ingredients
  

  • 3-4 sheets 現成酥皮 Puff pastry 
  • 1 block Emmental Portion 芝士 Emmental cheese  (grated 刨絲)
  • 適量 紅椒粉 Paprika 
  • 1 no. 蛋液 Beaten egg 

Instructions
 

  • 預熱焗爐180°C。將芝士刨絲鋪在酥皮上,然後由上而下對摺,用木棍輕壓。
  • 切成幼條狀,將兩條交錯扭成辮狀。
  • 灑上芝士碎與紅椒粉,輕輕壓實,掃上薄薄蛋液。
  • 焗8–10分鐘至金黃色即可。
  • Preheat the oven to 180°C. Sprinkle grated cheese evenly over the puff pastry, fold it in half and roll gently with a rolling pin.
  • Cut into thin strips, then twist two strips together into a spiral.
  • Sprinkle extra cheese and a little paprika on top, press gently, and brush lightly with beaten egg.
  • Bake for 8–10 minutes or until golden brown and crisp.

Notes

Yves Tips!
  • 壓酥皮時手勢要輕,否則層次會被壓扁。
    Be gentle when pressing the pastry to keep its flaky layers.
  • 蛋液只需輕輕掃上,太多會令表面暗啞。
    Apply only a thin layer of egg wash for a shiny finish.
  • 可加上 Parmesan 或香草粉,變化更多風味。
    Add Parmesan or dried herbs for extra aroma and flavour.
